Hamentaschen is THE cookie traditionally served at Purim. It is an easy recipe and fun to make with kids. Its three corner shape is said to represent Haman's 3 cornered hat. I use canned poppy seed, apricot, or cherry filling - raspberry jam also works great (All Fruit does not work well). This recipe is from "The Great Hadassah Cookbook".

INGREDIENTS

  • ½ cup butter
  • 1 cup sugar
  • 1 egg
  • 2 cups flour
  • 2 tsp. baking powder
  • 2 tbsp. milk
  • vanilla or lemon extract
  • PREPARATION

  • Cream butter and sugar, and add egg. Sift flour and baking powder together and add a little to creamed mixture. Add milk, then remaining flour. Mix in flavoring. Roll dough out 1/8 inch thick. Cut into rounds, dot each with a spoonful of filling, draw 3 sides together into the center (giving you a triangular pastry), and bake at 350 degrees for 18 to 25 minutes until delicately browned.
